Moo’s Dinner Table Vol. 2, Veggie Stew with Bone Broth

This stew is made with the kind of roots that grow deep into the earth.

And when your body feels tired or out of place, it helps to come back to that grounding energy.

Ingredients

  • 2 cups beef bone broth (homemade or store-bought)
  • 1 potato, cubed
  • 1 carrot, sliced
  • ½ beet, diced (optional, for a natural sweet-earthy flavor)
  • 1 small onion, chopped
  • 1 clove garlic, minced
  • A drizzle of oil or beef tallow
  • Salt & pepper to taste
  • (Optional: a few slices of ginger if you're cold-prone)

Instructions

  • Heat oil or tallow in a pot. Add onions and garlic, sauté until fragrant.
  • Add carrots, potatoes, and beets (if using), and give them a gentle stir.
  • Pour in bone broth and bring to a soft boil.
  • Lower heat and let it simmer for 25–30 minutes, or until veggies are soft.
  • Taste and season with salt, pepper, or a dash of soy sauce if you like a deeper flavor.

✨ Optional: Add a spoonful of cooked rice or barley if you want a heartier meal.
